Easy Keto Breakfast Cups


For the past few weeks I’ve been trying out something new for my weight loss journey, it’s called the Keto Diet. You’ve probably heard of this before and just like me I thought this diet plan was too good to be true. I mean, who eats cheese and bacon but still loses weight, right? I do!!!! I have been so happy with the results, the first week alone I lost all the weight I gained when I was in Thailand! That’s a total of 10lbs. Crazy right? Well, I still have a long way to go and a lot more weight that I wanna lose before I’m comfortable to share with you guys some before and after pictures, so for now, I will share with you a dish that I really enjoy eating that’s part of my Keto Diet. 

Keto Breakfast Cups:

  • Eggs
  • Chorizo Bits
  • Mozzarella
  • Cheddar
  • Salt
  • Pepper

Preheat oven to 350 F, spray cupcake tray with oil or butter, crack 1 egg per holder, add chorizo, top with mozzarella and cheddar, finish off by seasoning with salt and pepper. Bake for 10-15 minutes and serve!

The best part about this dish is that you can make a whole batch and then store in the fridge, which makes it perfect for your meal prep for the entire week or if you’re like me and you like snacking then this is a good option for that too! It’s a delicious and simple dish that doesn’t take too much time to make and you won’t get stressed out in the kitchen. Feel free to play around with your toppings whether you’re on a keto diet or not and simply enjoy!!
